Brenda and Tony’s easy Feijoa Muffins.
This recipe was sent to us by some lovely customers Tony and Brenda, and has quickly become our go-to recipe for tour groups, as it has highlights feijoas, and is really easy as the name suggests! In the fruit season I put half a small feijoa cut side up in each muffin, and dust with raw sugar to make a crispy top. I’ve also made these with choc-chunks for a change. They also freeze well.
20 small feijoas ( or 250gm pulp)
½ cup melted butter
1 cup sugar
2¼ cups plain flour
1 egg
1½ teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
Mash feijoas (or blend , or unfreeze!)
Add sugar and egg and beat lightly.
Add melted butter.
Add sifted dry ingredients. Mix to wet.
Cook for 20mins at 190oC (375oF).
